Shannon’s Garlic Buns

To kick off our new series of Made From Staff Recipes Shannon shares her recipe for Rustic White Garlic Buns! Using our leftover bread dough that was just not quite big enough to be a loaf of Rustic White Bread Shannon created a garlic and bread masterpiece. Curiosity quickly spiked amongst our retail staff as the bakery filled with a delicious toasty garlic smell and we all agreed we couldn’t keep this secret.

These buns follow the same recipe as our Rustic White Loaf, but instead of being shaped into 1 loaf of bread it is split up into 8 little buns!

For the Dough

  • 3 Cups of Flour
  • 1 1/4 tsp Salt
  • 1/4 tsp Instant Yeast
  • 1 1/3 Cup Cool Water

Make the dough:

Mix flour, salt and yeast together in mixer. Add cool water (leave about 2 cups of water aside and add small amounts if needed.) Mix until dough is fully mixed into a ball-should be soft but not sticky. Place in an airtight container that’s twice the size (to allow for rising). Let sit for 12-18 hours.

Shape the dough:
Scrape dough out the container onto a floured surface. Cut the dough into 8 pieces weighing approximately 0.20 lbs each. Shape the dough by pulling the dough into the centre to create a ball shape. Make sure all seams of the dough are on the bottom and the dough is shaped tight. Place dough on floured parchment and let rise for 25-30 min.

For the Butter

  • 1/4 cup of butter
  • 6 cloves of garlic
  • 1 tsp parsley (optional)
  • Parmesan for topping

Make the Butter:
Add the butter to a small sauce pan and put on medium heat to melt. Once melted add your minced garlic and cook until fragrant (about 30-60 seconds). 

Preparing the Buns:
With a sharpe knife make two small cuts on the top of each bun. Brush melted butter onto your risen buns and transfer to the oven. Bake at 350F for 25-30 minutes.

To Serve:
Slice the bun in half spread on more garlic butter and sprinkle with Parmesan cheese.
