Pecan Pumpkin Muffins

The leaves are falling, the weather is getting colder and the sun it setting earlier which means Fall is fast approaching! Let’s get into the season with these delicious Pecan Pumpkin Muffins.

Ingredients

2.5 cups of flour
2 tsp baking soda
1 tsp salt1 tsp cinnamon
1 tsp nutmeg
3 cups of sugar
1 cup vegetable oil
4 eggs
3/4 cup buttermilk
1 tsp vanilla
1 lb pumpkin puree
1 cup dried cranberries
1 cup chopped pecan

Directions

  • Preheat oven 350
  • In a large bowl combine flour, baking soda, salt, cinnamon and nutmeg. Mix with a whisk until dry ingredients are combined.
  • Add sugar, oil, eggs and buttermilk and mix well with a spatula
  • Add vanilla, pumpkin, cranberries and pecans and mix until just combined
  • Divide amongst 12 muffin cups
  • Bake at 350 for 25-35 minutes or until a toothpick comes out clean

Pro Tips!

Nutmeg: You can buy whole nutmeg and grate it yourself. The extra flavour is worth it!
Buttermilk: You can use regular milk if your don’t have buttermilk on hand. Just add 1 tbsp of white vinegar or lemon juice for every cup of milk. Let sit for 10 minutes then use in the recipe!
