Roasted Garlic New Potatoes

New Potatoes are arguably the BEST produce ever. They’re tender, creamy and can be cooked so in many ways that will always taste delicious.

Today we’re sharing a Roasted Garlic and New Potatoes recipe! This is just one of the many ways you can enjoy a new potato.

If you’re in the mood for something easier, just boil the potatoes in salted water until soft, drain water & place the potatoes on your plate, smash with a fork, add some butter, salt and pepper and voila! 

But if you’re in the mood for a little more flavour these Roasted Garlic New Potatoes are just as simple!

Ingredients

1 tablespoon olive oil

2 tablespoons of Garlic Expressions Vinaigrette 

 1 teaspoons fresh thyme leaves, chopped

1 teaspoon fresh rosemary leaves, chopped

2 cloves garlic, finely chopped

2 lb new potatoes, red or yukon golds

Directions

  • Heat oven to 375°F.
  • In bowl, mix olive oil, garlic expressions, thyme, rosemary, and garlic. 
  • Cut potatoes in half; spread on nonstick pan. Drizzle with olive oil mixture; toss to coat.
  • Bake 30 to 35 minutes or until potatoes are golden and slightly crispy. Sprinkle with salt and pepper
  • Enjoy!
