It’s sweet corn season! One of the most versatile veggies in our opinion. Enjoy it on the cob with butter salt and pepper, in a delicious Mexican Corn Salad (recipe coming soon), or try it with a spiced butter which is what we’re sharing today!
Spice up your sweetcorn with this Chilli Lime Butter with a Feta Crumble!
- 1 lb of butter
- 1.5 tbsp of Chilli Powder
- 1 tsp of Cayenne Pepper
- zest of 1 lime
- juice of 1 lime
- feta for topping
- With a hand mixer or a stand mixer beat the butter until fluffy (about 2-4 minutes)
- Scrape the sides of the bowl an add all the ingredients except for the feta
- Transfer to a fridge safe container
- Store for up to 1 month
Spread butter evenly over a warm cob of corn, sprinkle with crumbled feta and enjoy!
